I love to cook, and I cook and bake a lot. It is so much easier to eat delicious, healthy food when you prepare it at home. One of my favorite chefs, James Beard winner Sam Hayward of Fore Street in Portland, Maine, told a local radio station that restaurant food is not intended to be eaten every day. It is made for taste intensity, and often contains more calories and fat than food we prepare at home. I don't have to tell you that it is hard to eat a lot of meals out and not gain weight.

If you want to eat delicious food and be a healthy weight, the best way is to get cooking! Use fresh local produce when possible. I belong to a CSA (community supported agriculture), Laughing Stock Farm, from which I get fresh organic veggies during the summer and fall, and twice a month in the winter and spring. To help you prepare delicious, healthy food, I'm going to regularly share with you some of the things we're preparing in my house. Some recipes are my original creations, and others are from cookbooks and cooking blogs.

I'll tell you up front that I'm kind of a crazy cook. I think of recipes as ideas rather than instructions. I usually mess with them a lot. Do not EVER think of recipes as rules that you have to strictly follow. Sometimes, it is a good idea to do that, but if you know enough about cooking, substitute your own judgment. You may improve on the recipe.

Because I fly by the seat of my pants in the kitchen, let me know if you have questions about my recipes. I may leave out some little details that seem really obvious to me but aren't to less experienced cooks. I want to know if you are confused because I'll clear things up for you. Most importantly, have fun cooking!
